  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Lemon Juice fresh is best
  • 1 teaspoon Cinnamon
  • 2 tablespoons Cornstarch
For the Cobbler Topping
  • 2 cups All-Purpose Flour
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted Butter melted
  • 1 cup Milk or non-dairy alternative
For the Sweet Glaze
  • 1 cup Powdered Sugar
  • 2 tablespoons Milk or non-dairy alternative

Method
 

Preparation and Baking
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix sliced peaches with granulated sugar, vanilla extract, lemon juice, cinnamon, and cornstarch. Let sit for 10-15 minutes.
  3. Grease a 9x13-inch baking dish with butter or non-stick spray.
  4. In another bowl, combine all-purpose flour, baking powder, salt, milk, and melted butter. Stir until just combined.
  5. Spoon the cobbler topping over the peach mixture, dolloping it in rustic patches.
  6. Bake for 35-40 minutes, or until the topping is golden brown and a toothpick comes out clean.
  7. While baking, whisk together powdered sugar, milk, and vanilla until smooth for the glaze.
  8. Let the cobbler cool for about 10 minutes, then drizzle the glaze over top and serve warm.
