- In a bowl, mix sliced peaches with granulated sugar, vanilla extract, lemon juice, cinnamon, and cornstarch. Let sit for 10-15 minutes.

- In another bowl, combine all-purpose flour, baking powder, salt, milk, and melted butter. Stir until just combined.
- Spoon the cobbler topping over the peach mixture, dolloping it in rustic patches.
- Bake for 35-40 minutes, or until the topping is golden brown and a toothpick comes out clean.
- While baking, whisk together powdered sugar, milk, and vanilla until smooth for the glaze.
- Let the cobbler cool for about 10 minutes, then drizzle the glaze over top and serve warm.
