How to Make Sweet Maple Sausage Breakfast Casserole
- Preheat your oven to 375°F (190°C).
- Prep the veggies by dicing potatoes, bell pepper, and onion into ½-inch cubes. Soak the potatoes in cold water for 5 minutes, then drain and dry them well.
- Brown the sausage in a skillet over medium-high heat for 6-7 minutes, breaking it into crumbles. Set aside while keeping the rendered fat.
- Sauté the prepared potatoes, bell pepper, and onion in the same skillet until tender and golden, about 8 minutes.
- Whisk together eggs, milk, salt, pepper, smoked paprika, and half of the cheddar. Add in maple syrup, Dijon mustard, and apple cider vinegar.
- Assemble by spreading the brown sausage and sautéed veggies in a greased baking dish. Pour the egg mixture over the top, then sprinkle with the remaining cheddar.
- Bake for 30-35 minutes until the casserole is set and the top is golden brown. Let it rest for 5-7 minutes before slicing.
