How to Make Sweet Maple Sausage Breakfast Casserole
  1. Preheat your oven to 375°F (190°C).
  2. Prep the veggies by dicing potatoes, bell pepper, and onion into ½-inch cubes. Soak the potatoes in cold water for 5 minutes, then drain and dry them well.
  3. Brown the sausage in a skillet over medium-high heat for 6-7 minutes, breaking it into crumbles. Set aside while keeping the rendered fat.
  4. Sauté the prepared potatoes, bell pepper, and onion in the same skillet until tender and golden, about 8 minutes.
  5. Whisk together eggs, milk, salt, pepper, smoked paprika, and half of the cheddar. Add in maple syrup, Dijon mustard, and apple cider vinegar.
  6. Assemble by spreading the brown sausage and sautéed veggies in a greased baking dish. Pour the egg mixture over the top, then sprinkle with the remaining cheddar.
