  • 1 packet Taco Seasoning Mix Consider making your own.
  • 1/2 cup Water Necessary for hydrating the beef mixture.
  • 1 cup Salsa Con Queso Can be swapped with mild nacho cheese.
For the Casserole Layers
  • 6 pieces Flour or Corn Tortillas Pre-crisp corn tortillas for best results.
  • 2 cups Shredded Mexican Cheese Blend or Cheddar Cheese Use any favorite cheese.
For Serving
  • 1 cup Sour Cream Optional; guacamole or salsa also make tasty alternatives.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Heat a drizzle of oil in a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks.
  3. Stir in taco seasoning and water, simmer for about 2-3 minutes. Mix in the salsa con queso until everything is well combined.
  4. Lightly spray an 8-inch baking dish with cooking spray. Lay one tortilla at the bottom, then spread about ⅓ of the beef mixture over it, followed by ⅓ of the shredded cheese. Repeat this layering process two more times, finishing with the remaining beef mixture and a generous topping of cheese.
  5. Place the assembled casserole into the preheated oven and bake for 20 minutes.
  6. Let the casserole sit for a few minutes to set the layers before slicing and serving.
