Cooking Steps
- Preheat the oven to 400°F (200°C).
- Scrub the Russet potatoes well, pricking them with a fork. Rub with olive oil and bake for 45-60 minutes.
- Cook the protein in a skillet over medium heat for 5-7 minutes, add onion and garlic, and sauté for 3-4 minutes.
- Stir in taco seasoning and water, simmer for 2-3 minutes. Mix in black beans and corn and cook until heated through.
- Slice the baked potatoes open lengthwise and fluff the insides.
- Fill each potato with the taco mixture and top with shredded cheese. Return to the oven for 5 minutes.
- Serve warm topped with sour cream, avocado, cilantro, and other desired toppings.
