- In a large bowl, combine the plain yogurt, garlic, ginger, lemon juice, hot paprika, cumin, garam masala, and cayenne pepper. Mix until smooth and aromatic.
- Take the boneless skinless chicken thighs and coat them thoroughly with half of the prepared marinade. Let them sit for at least 30 minutes.
- In a separate bowl, mix the remaining marinade with tomato paste to create a zesty pizza sauce.
- Preheat your grill to medium-high heat. Grill the marinated chicken for 6-7 minutes on each side.
- On each naan bread, spread a layer of the prepared sauce. Top with sliced grilled chicken, fresh mango, red onion, and mozzarella.
- Return the assembled naan pizzas to the grill or skillet. Cook for 5-7 minutes until cheese is melted.
- Sprinkle fresh mint and cilantro on top before serving.
