Ingredients
  

For the Marinade
  • 1 cup Plain Yogurt substitute with Greek yogurt for a thicker consistency
  • 2 cloves Garlic fresh or minced
  • 1 inch Ginger fresh ginger preferred
  • 2 tbsp Lemon Juice lime juice can be a substitute
  • 2 tbsp Hot Paprika regular paprika for less heat
  • 1 tbsp Cumin ground coriander can be an alternative
  • 2 tbsp Garam Masala can be homemade or store-bought
  • 1 tsp Cayenne Pepper adjust to taste or omit for milder
For the Pizza
  • 1 lb Boneless Skinless Chicken Thighs or chicken breasts for a leaner option
  • 1 cup Mango peach or pineapple can be substituted
  • 1 cup Mozzarella Cheese provolone or feta can be used
  • 2 pieces Naan Bread store-bought or homemade
  • 1 small Red Onion soak slices in cold water to mellow flavor
  • 1 cup Fresh Mint variations according to preference
  • 1 cup Fresh Cilantro feel free to vary according to preference

Method
 

Preparation
  1. In a large bowl, combine the plain yogurt, garlic, ginger, lemon juice, hot paprika, cumin, garam masala, and cayenne pepper. Mix until smooth and aromatic.
  2. Take the boneless skinless chicken thighs and coat them thoroughly with half of the prepared marinade. Let them sit for at least 30 minutes.
  3. In a separate bowl, mix the remaining marinade with tomato paste to create a zesty pizza sauce.
  4. Preheat your grill to medium-high heat. Grill the marinated chicken for 6-7 minutes on each side.
  5. On each naan bread, spread a layer of the prepared sauce. Top with sliced grilled chicken, fresh mango, red onion, and mozzarella.
  6. Return the assembled naan pizzas to the grill or skillet. Cook for 5-7 minutes until cheese is melted.
  7. Sprinkle fresh mint and cilantro on top before serving.
