- In a mixing bowl, combine Greek yogurt, avocado oil, lemon juice, garlic paste, ginger paste, chopped herbs, salt, and ground spices. Mix until smooth.
- Take the lamb chops and coat each chop with the marinade. Cover and refrigerate for at least 3-4 hours.
- About 30-40 minutes before cooking, take the chops out of the fridge and let them sit at room temperature.
- Heat a cast iron skillet over high heat. Sear the marinated chops for about 8-10 minutes until cooked through.
- Remove the chops and let them rest for a few minutes before serving.
