Ingredients
  

For the Pasta
  • 8 oz Pasta Choose gluten-free if desired
For the Salad
  • 1 cup Large Green Olives Manzanilla recommended
  • 1 cup Feta Cheese Dairy-free option available
For the Dressing
  • 1/2 cup Extra Virgin Olive Oil Flavorful base for dressing
  • 1/4 cup Olive Brine Use white vinegar as a substitute
  • 2 cloves Garlic Minced
  • 1 unit Lemon Zest and juice required
  • Black Pepper Add to taste

Method
 

Directions
  1. Cook the pasta in salted water for 8-10 minutes until al dente. Drain and rinse with cold water.
  2. In a mason jar, combine olive oil, olive brine, garlic, lemon zest, lemon juice, and black pepper. Shake well.
  3. In a mixing bowl, combine cooked pasta, olives, and feta, tossing until evenly mixed.
  4. Pour dressing over the pasta mixture and fold gently to combine.
  5. Taste and adjust seasoning with extra lemon juice or black pepper as needed.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving.
