  • 12 ounces Barilla Penne recommended for sturdiness
For the Salmon
  • 1 pound salmon farm-raised or wild
For the Sauce
  • 2 tablespoons olive oil use quality olive oil
  • 1 teaspoon salt season generously
  • 1 teaspoon black pepper season generously
  • 1 medium onion diced
  • 2 tablespoons butter unsalted
  • 3 cloves garlic minced
  • 1 tablespoon dried parsley or fresh parsley
  • 1 tablespoon fresh lemon zest do not skip
  • 1 cup milk lukewarm
  • ½ cup parmesan cheese freshly grated
  • ¼ teaspoon red pepper flakes adjust based on spice preference
  • 1 cup pasta water reserved before draining

Method
 

Cooking Instructions
  1. Boil salted water in a large pot, add pasta, and cook until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
  2. Pat the salmon dry, season with salt and pepper, then sauté in olive oil over medium heat for 3-4 minutes per side until golden brown. Remove from pan.
  3. In the same pan, add diced onions and sauté until translucent, about 3 minutes. Add butter, minced garlic, and dried parsley, cooking briefly until fragrant.
  4. Return about 20% of the cooked salmon back to the pan. Gradually stir in lukewarm milk and reserved pasta water, mixing thoroughly. Incorporate parmesan until melted.
  5. Gently fold in the remaining pasta and salmon, adjusting sauce consistency with additional pasta water. Warm through on low heat.
  6. Plate the pasta and garnish with lemon zest, an extra sprinkle of parmesan, and red pepper flakes. Serve immediately.
