How to Make
- Preheat your oven to 425°F (218°C). Spread the tater tots on a baking sheet and bake for about 30 minutes, or until they’re golden brown and crispy.
- While your tots are baking, cook sausage in a skillet over medium heat until browned. Add flour to create a roux, then whisk in milk. Season with salt and pepper, and let simmer until thickened.
- In a bowl, whisk together 15 eggs with salt and pepper. Pour into a skillet over medium-low heat, stirring gently until fluffy and just set.
- Assemble the bowl: Layer crispy tater tots, then fluffy scrambled eggs, top with sausage gravy, and finish with cheese and optional salsa.
