- Generously sprinkle salt and pepper over both sides of the boneless pork chops and let them rest for at least 15 minutes.
- In a skillet over medium-high heat, drizzle olive oil to coat the bottom.
- Carefully place the seasoned pork chops in the skillet and sear for about 3-4 minutes on each side until browned and the internal temperature reaches 145°F.
- Remove the chops from the pan and tent with foil, letting them rest for about 5 minutes.
- In the same skillet, add the thinly sliced onions and apples. Sauté for about 5-7 minutes until softened.
- Stir in the apple butter, whole grain mustard, and water, and let it simmer for a couple of minutes.
- Return the pork chops to the skillet, nestling them in the apple butter sauce, and cook for an additional 5 minutes.
