Ingredients

For the Pie Crust
  • 2 cups all-purpose flour No gluten-free substitutes recommended for this specific crust.
  • 1/2 teaspoon salt Use kosher salt for best results.
  • 1 cup unsalted butter (cold and cubed) Substitute with cold margarine or coconut oil for a dairy-free option.
  • 1/4 cup granulated sugar Brown sugar can be used for a richer flavor.
  • 4-5 tablespoons ice water Use cold water to maintain dough integrity.
For the Filling
  • 1 cup light corn syrup Substitute with agave syrup or maple syrup for a healthier option.
  • 1 cup brown sugar Can use white sugar as an alternative, but flavor will be less rich.
  • 1/2 cup unsweetened cocoa powder Dark cocoa powder can deepen the chocolate essence.
  • 3 large eggs No direct substitutes recommended; for a vegan option, use flax eggs.
  • 1 teaspoon vanilla extract Use pure vanilla for the best results.
  • 1 cup pecan halves Swap with walnuts or hazelnuts for a different flavor profile.
  • 1 cup semi-sweet chocolate chips Use dark chocolate for a richer taste.

Method

Pie Crust Preparation
  1. In a mixing bowl, whisk together all-purpose flour, salt, and granulated sugar.
  2. Add cold, cubed butter and mix until the mixture resembles coarse crumbs.
  3. Gradually stir in ice water until the dough holds together.
  4. Shape into a disk, wrap in plastic, and chill for 30 minutes.
Baking Instructions
  1. Preheat the oven to 350°F (175°C) for baking the pie.
  2. On a lightly floured surface, roll out the chilled dough to fit a 9-inch pie pan.
  3. Carefully transfer it into the pan and prick the bottom with a fork to prevent bubbling.
  4. In a large bowl, whisk together light corn syrup, brown sugar, cocoa powder, and eggs until smooth.
  5. Stir in vanilla extract, pecans, and semi-sweet chocolate chips, blending everything evenly.
  6. Pour the rich chocolate filling into the prepared crust, spreading it evenly.
  7. Bake for 50-60 minutes until the edges are set and the center is slightly jiggly; it will firm up as it cools.
  8. Remove the pie from the oven and cool on a wire rack for at least 2 hours.
