Ingredients
  

Marinade
  • 1 cup Sweet Chili Sauce or sriracha for extra heat
  • 2 tablespoons Red Curry Paste add less for a milder taste
  • 2 tablespoons Fish Sauce or Soy Sauce use soy for gluten-free
  • 2 tablespoons Lime Juice or Rice Vinegar
BBQ Sauce
  • 1 cup Sweet Chili Sauce base sauce
  • 1/4 cup Peanut Butter or tahini for nut-free
  • 2 tablespoons Red Curry Paste
  • 2 tablespoons Fish Sauce or Soy Sauce for umami
  • 2 tablespoons Lime Juice or Rice Vinegar
Ribs
  • 3 pounds Pork Ribs (Baby Back or Spare Ribs) remove silver skin for tenderness
  • 1/4 cup Roasted Peanuts (chopped) for topping
  • 1/4 cup Cilantro (chopped) or green onions as substitute

Method
 

Preparation
  1. In a sealed container, combine sweet chili sauce, red curry paste, fish sauce, and lime juice. Generously brush this marinade over the ribs and let rest in the fridge overnight.
  2. In a saucepan over medium heat, mix together sweet chili sauce, peanut butter, red curry paste, fish sauce, and lime juice. Stir continuously for 2-3 minutes until smooth.
  3. Arrange marinated ribs vertically in the slow cooker. Set on low and cook for 6-8 hours until tender.
  4. Transfer cooked ribs to a baking sheet. Brush half of BBQ sauce over ribs and broil for 3-5 minutes until bubbling.
  5. Sprinkle ribs with chopped peanuts and cilantro. Serve with remaining BBQ sauce on the side.
