- In a sealed container, combine sweet chili sauce, red curry paste, fish sauce, and lime juice. Generously brush this marinade over the ribs and let rest in the fridge overnight.
- In a saucepan over medium heat, mix together sweet chili sauce, peanut butter, red curry paste, fish sauce, and lime juice. Stir continuously for 2-3 minutes until smooth.
- Arrange marinated ribs vertically in the slow cooker. Set on low and cook for 6-8 hours until tender.
- Transfer cooked ribs to a baking sheet. Brush half of BBQ sauce over ribs and broil for 3-5 minutes until bubbling.
- Sprinkle ribs with chopped peanuts and cilantro. Serve with remaining BBQ sauce on the side.
