Method
 

Cooking Instructions
  1. Pound the chicken breasts to an even ½-inch thickness using a meat mallet or rolling pin.
  2. In a zip-lock bag, combine extra virgin olive oil, minced garlic, thyme, oregano, salt, pepper, and lemon zest.
  3. Add the chicken to the marinade, seal the bag, and give it a gentle massage until well-coated. Let it chill for 4 hours or overnight.
  4. Preheat your grill to high heat and lightly oil the grates.
  5. Place the chicken on the grill and cook for 2-3 minutes on each side.
  6. After grilling, let the chicken rest for 3-4 minutes.
  7. Optional: Squeeze fresh lemon juice over the grilled chicken before serving.
