- Pour the blended mixture into a bowl, add chia seeds, and stir gently for about 1 minute.
- Taste your mixture and adjust sweetness or tartness, adding more lemon juice for extra zing if desired.
- Transfer the pudding into serving glasses or jars, filling them three-quarters full, then refrigerate for a minimum of 4 hours or overnight.
- Before serving, stir the pudding and top with whipped coconut cream, extra lemon zest, and fresh berries.
