Ingredients
  

For the Beef Marinade
  • 1 pound Sirloin or Flank Steak slice thinly against the grain
  • 3 tablespoons Soy Sauce or tamari for gluten-free
  • 2 tablespoons Cornstarch for velveting
  • 2 tablespoons Vegetable Oil high smoke point oil
For the Sauce
  • 3 tablespoons Oyster Sauce or hoisin sauce as a substitute
  • 1 tablespoon Brown Sugar to balance saltiness
  • 1 tablespoon Toasted Sesame Oil avoid olive oil
  • 1 tablespoon Fresh Ginger or ginger paste
  • 3 cloves Fresh Garlic or garlic powder
For the Noodles and Vegetables
  • 8 ounces Lo Mein Noodles or chow mein noodles
  • 2 cups Cabbage shredded napa cabbage works well
  • 1 cup Carrots julienne or thinly sliced
  • 1 cup Snap Peas or snow peas as a substitute
  • 3 stalks Green Onions use both white and green parts

Method
 

Cooking Instructions
  1. Combine sliced beef with soy sauce, cornstarch, and vegetable oil in a bowl. Let sit for 10-15 minutes.
  2. In a separate bowl, mix together remaining soy sauce, oyster sauce, brown sugar, toasted sesame oil, fresh ginger, and garlic. Stir until sugar is dissolved.
  3. Heat vegetable oil in a wok over high heat. Add marinated beef in a single layer and cook for about 2 minutes until browned, then remove and set aside.
  4. Stir fry carrots and snap peas for 2 minutes until bright and just tender.
  5. Add cabbage and white parts of green onions to the wok and cook for about 2 minutes until cabbage wilts.
  6. Return sautéed beef with juices to the wok. Add cooked lo mein noodles and toss together.
  7. Pour sauce over the mixture and toss for 1-2 minutes until well-coated and glossy.
  8. Toss in green onion tops for garnish. Serve hot.
