Method
 

Directions
  1. Start by pressing the extra-firm tofu for at least 30 minutes to remove excess moisture.
  2. Slice the tofu into even 1/2-inch pieces.
  3. Set up an assembly line with three shallow bowls: one with flour, one with plant-based milk, and one with panko breadcrumbs.
  4. Dredge a slice of tofu in flour, dip in plant-based milk, and roll in panko breadcrumbs.
  5. Heat oil over medium heat until shimmering, then fry coated tofu slices until golden brown, about 4-5 minutes per side.
  6. Transfer fried tofu katsu to a paper towel-lined plate to absorb excess oil, serve hot.
