  • 1 cup coconut milk almond milk can be used as a substitute
  • 2 large eggs
  • 1/2 cup unsalted butter use vegan butter for dairy-free

How to Make Trinidad Coconut Sweet Bread
  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it lightly.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg until well blended.
  3. In another bowl, whisk together the coconut milk, eggs, and melted butter until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
  5. Gently fold in the shredded coconut until evenly distributed.
  6. Pour the batter into the prepared loaf pan, smoothing the top slightly with a spatula.
  7. Place the loaf in the oven and bake for 45-50 minutes, or until a toothpick inserted comes out clean.
  8. Allow the bread to cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.
