How to Make Trinidad Coconut Sweet Bread
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it lightly.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg until well blended.
- In another bowl, whisk together the coconut milk, eggs, and melted butter until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
- Gently fold in the shredded coconut until evenly distributed.
- Pour the batter into the prepared loaf pan, smoothing the top slightly with a spatula.
- Place the loaf in the oven and bake for 45-50 minutes, or until a toothpick inserted comes out clean.
- Allow the bread to cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.
