  • 4 slices Beef Bacon Consider turkey bacon or sausage for a lighter choice.
  • 1 cup Cheddar Cheese Try gouda or pepper jack for a twist.
  • 2 large Eggs Adjust baking time for preferred yolk firmness.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean and poke several holes in each one.
  2. Coat each potato with avocado oil, then sprinkle with salt and black pepper. Bake for 50-60 minutes.
  3. Cool the potatoes for about 10 minutes, slice in half lengthwise, and scoop out most of the insides.
  4. Mash the potato flesh with hot milk, unsalted butter, salt, and black pepper to taste.
  5. Spoon the creamy mashed mixture back into the potato skins, creating a well in the center. Add beef bacon and cheddar cheese.
  6. Crack an egg into each well, then season with salt and pepper. Adjust the oven temperature to 375°F (190°C) and bake for 15-20 minutes.
  7. Let the potatoes cool for a couple of minutes before serving.
