Preparation
- Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean and poke several holes in each one.
- Coat each potato with avocado oil, then sprinkle with salt and black pepper. Bake for 50-60 minutes.
- Cool the potatoes for about 10 minutes, slice in half lengthwise, and scoop out most of the insides.
- Mash the potato flesh with hot milk, unsalted butter, salt, and black pepper to taste.
- Spoon the creamy mashed mixture back into the potato skins, creating a well in the center. Add beef bacon and cheddar cheese.
- Crack an egg into each well, then season with salt and pepper. Adjust the oven temperature to 375°F (190°C) and bake for 15-20 minutes.
- Let the potatoes cool for a couple of minutes before serving.
