How to Make
  1. Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Drain on paper towels and set aside.
  2. Sauté the Onions: Without cleaning the skillet, add olive oil and butter. Once melted, add the sliced onions and stir to coat.
  3. Caramelize the Onions: Cook the onions for about 25-30 minutes, stirring occasionally until golden brown. Season with salt and pepper.
  4. Preheat the Skillet: While onions caramelize, preheat a non-stick skillet over medium heat.
  5. Butter the Bread: Butter one side of each slice of bread. Place four slices butter-side down in the skillet.
  6. Layer the Cheeses and Fill: Distribute cheddar and Gruyere cheeses over the bread, then top with caramelized onions and crispy bacon.
  7. Assemble the Sandwich: Place remaining slices of bread on top, butter-side up.
  8. Grill the Sandwiches: Grill each sandwich for 4-5 minutes on each side until golden brown and cheese is melted.
  9. Slice and Serve: Remove from skillet, let rest for a minute, then slice and serve warm.
