How to Make Breakfast Club Sandwich
  1. Preheat the oven to 425°F and line a baking sheet with aluminum foil.
  2. Arrange the bacon slices on the lined sheet in a single layer and bake for 25-30 minutes until crispy and golden.
  3. Transfer the bacon to a paper-towel-lined plate to drain excess grease.
  4. Divide the ground pork sausage into four equal portions and shape each into a patty slightly larger than the bread slices.
  5. Cook the sausage patties in a skillet for about 3-4 minutes per side until browned. Top each with a slice of cheese to melt.
  6. Wipe the skillet clean and melt the cowboy butter over medium heat. Add beaten eggs, salt, and pepper, stirring gently until cooked.
  7. Spread 1 tablespoon of cowboy butter on one side of each slice of toasted bread. Assemble the sandwiches in layers: sausage, bacon, avocado, scrambled eggs, topped with another slice of toast.
