For the Sauce
  • 2 cups Cherry tomatoes Diced tomatoes work as an alternative
  • 2 tbsp Olive oil Avocado oil can also be used
  • 2 cloves Garlic (minced) Can substitute with garlic powder
  • 1 tsp Red pepper flakes (optional) Omit for a milder taste
For the Finish
  • 1 cup Fresh basil leaves (chopped) Dried basil (1 tsp) can be used if fresh isn’t available
  • 1/2 cup Grated Parmesan cheese Nutritional yeast is a dairy-free substitute
  • to taste Salt and pepper Adjust to suit your taste
  • 1 tbsp Fresh basil leaves (for garnish) Parsley can be a lovely alternative

Method
 

Cooking Steps
  1. Boil Pasta: Bring a pot of salted water to a rolling boil. Add heart-shaped pasta and cook until al dente, then drain and set aside.
  2. Sauté Garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add Tomatoes: Toss in halved cherry tomatoes and optional red pepper flakes. Cook until the tomatoes soften.
  4. Combine Ingredients: Toss the cooked pasta with the tomato mix in the skillet. Stir in chopped basil and half of the grated Parmesan.
  5. Season: Adjust with salt and pepper to enhance the flavors.
  6. Serve: Plate the pasta, sprinkle with the remaining Parmesan, and garnish with fresh basil.
