Making Kaju Katli
- Blend whole raw cashews into a fine powder using a food processor.
- Pour blended cashew powder through a fine mesh strainer to achieve a uniform texture.
- In a saucepan, combine water and granulated sugar. Stir gently until dissolved and let it boil for about 4 minutes.
- Remove from heat and mix in cashew powder until thick and creamy. Incorporate coconut oil and optional flavorings.
- The mixture should resemble a firm cookie dough; adjust with coconut oil if necessary.
- Grease a cutting board, transfer dough, roll to 1/4-inch thick, and cut into diamond shapes while warm.
