  • 1 cup Granulated Sugar Alternative sweeteners can be used.
  • 1/2 cup Water
  • 2 tablespoons Coconut Oil Replaces ghee.
  • 1/4 teaspoon Salt Sea salt is recommended.
Optional Flavorings
  • 1 teaspoon Rose Water Extract Can use almond or orange extract.
  • 1/2 teaspoon Cardamom Powder Adjust to taste.

Method
 

Making Kaju Katli
  1. Blend whole raw cashews into a fine powder using a food processor.
  2. Pour blended cashew powder through a fine mesh strainer to achieve a uniform texture.
  3. In a saucepan, combine water and granulated sugar. Stir gently until dissolved and let it boil for about 4 minutes.
  4. Remove from heat and mix in cashew powder until thick and creamy. Incorporate coconut oil and optional flavorings.
  5. The mixture should resemble a firm cookie dough; adjust with coconut oil if necessary.
  6. Grease a cutting board, transfer dough, roll to 1/4-inch thick, and cut into diamond shapes while warm.
