Cashew Sauce
  • 1 cup Cashews Soak or boil to soften
  • 2 cloves Garlic Sauté until fragrant
  • 2 tablespoons Olive Oil For sautéing
  • 1 cup Water For creamy consistency
Pasta
  • 8 ounces Pasta (any shape) Penne or rigatoni works well
  • to taste Salt & Pepper Essential seasonings
Flavor
  • 1 cup Sun-Dried Tomatoes For tangy sweetness
  • 1 cup Fresh Basil For aromatic freshness
  • 2 tablespoons Tomato Paste For concentrated tomato flavor

Method
 

Preparation
  1. Soak or boil cashews for about 10 minutes until soft.
  2. Drain cashews and blend them with water until smooth and creamy.
  3. Bring a large pot of salted water to a boil and cook pasta according to package instructions.
  4. In a skillet, heat olive oil, sauté garlic and sun-dried tomatoes for around 60 seconds.
  5. Lower the heat, add cashew cream, tomato paste, and basil to the skillet, and let it simmer for 1-2 minutes.
  6. Toss the cooked pasta into the sauce, mixing thoroughly, and season with salt and pepper to taste.
