Cooking Steps
- Heat 1 tablespoon of vegetable oil in a medium saucepan over medium heat. Add minced garlic and ginger, sautéing for about 5 minutes until fragrant and lightly golden.
- Add 1½ cups of uncooked jasmine rice to the pan, stirring continuously for 2 minutes until it’s lightly golden.
- Stir in the diced pineapple, sriracha, coconut aminos, and sugar, sautéing for an additional minute to meld the flavors.
- Pour in 2 cups of water, bring to a boil, then reduce heat to medium-low. Cover and simmer for about 15 minutes until the rice is fully cooked.
- Turn off the heat and keep the lid on for 5 minutes to steam. Fluff the rice with a fork before serving.
