- Wash your fresh carrots thoroughly. Peel them if you prefer, then use a vegetable peeler to create beautiful thin ribbons.
- In a small bowl, whisk together soy sauce, rice vinegar, lime juice, maple syrup, sesame oil, minced garlic, and ginger until smooth.
- In a large mixing bowl, add the carrot ribbons and pour the dressing over them. Toss to coat evenly.
