Ingredients
  

For the Casserole
  • 1 lb Ground Pork swap for ground turkey for a lighter option
  • 1 large Purple Onion finely chopped; can use yellow onion if preferred
  • 2 tbsp Taco Seasoning consider homemade seasoning for a healthier twist
  • 1 cup Water or use chicken/vegetable broth for extra flavor
  • 8 oz Cream Cheese can use Greek yogurt for a lighter touch
  • 1 can Diced Green Chilis fresh jalapeños for extra heat
  • 1 cup Tomatillo Salsa substitute with your favorite salsa
  • 1 can Black Beans rinsed and drained
  • 1 cup Corn frozen corn works well if fresh is out of season
  • 2 cups Fritos Corn Chips replace with tortilla chips if desired
  • 2 cups Taco Cheese any shredded cheese blend can make a tasty substitute

  • 4-quart baking dish
  • large skillet

Method
 

Directions
  1. Preheat your oven to 375°F (190°C). Spray a 4-quart baking dish with cooking spray.
  2. Brown the ground pork in a large skillet over medium heat, breaking it apart as it cooks for about 5-7 minutes.
  3. Sauté the chopped onion in the same skillet for 3-4 minutes until translucent.
  4. Mix in taco seasoning and water, stirring until well incorporated. Cook until the mixture thickens, about 5 minutes.
  5. Combine the salsa, green chilis, cream cheese, black beans, and corn, mixing well before removing from heat.
  6. Layer 2 cups of Fritos corn chips at the bottom of the prepared baking dish.
  7. Spread the ground pork mixture evenly over the Fritos, followed by shredded cheese and remaining Fritos on top.
  8. Cover with foil and bake for 15 minutes. Remove foil and bake for an additional 5 minutes until cheese is melty.
  9. Serve hot, customizing plates with taco toppings.
