Method
 

Directions
  1. Preheat the oven to 375°F (190°C).
  2. Mix the dry rub ingredients of thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper. Coat the chicken thighs evenly.
  3. Cook the bacon in an oven-safe sauté pan over medium heat until crispy, about 5-7 minutes. Remove the bacon, leaving fat in the pan.
  4. Sear the chicken thighs in the retained bacon fat for about 4-5 minutes on each side until golden brown.
  5. Sauté the chopped cabbage in the remaining bacon fat for 2-3 minutes until wilted.
  6. Add diced potatoes, onions, and chicken stock to the pan. Mix well.
  7. Incorporate the cooked bacon back into the mixture, then nestle the seared chicken thighs on top.
  8. Bake in the preheated oven for 45-50 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  9. Serve hot, allowing everyone to gather around to enjoy.
