  • 2 cups Cucumber Chopped into thin strips
  • 0.5 cups Fresh Parsley Chopped
  • 1 unit Chilies Adjust based on heat preference
  • 2 tablespoons Sesame Seeds Toasted
For the Dressing
  • 0.5 cups Peanut Butter Smooth or crunchy
  • 2 tablespoons Soy Sauce Gluten-free optional
  • 1 tablespoon Sesame Oil Optional for lighter version
  • 1 tablespoon Maple Syrup Honey substitution available
  • 2 tablespoons Rice Vinegar Can use lemon or lime juice

Method
 

Instructions
  1. Chop the cucumbers into thin strips, and place them in a large bowl.
  2. Mix in the chopped parsley, finely minced chilies, and toasted sesame seeds.
  3. Whisk together the peanut butter, soy sauce, sesame oil, rice vinegar, maple syrup, and minced garlic until smooth.
  4. Pour the dressing over the cucumber mixture and toss well until every piece is coated.
  5. Serve immediately and consider garnishing with extra sesame seeds if desired.
