Ingredients
  

For the Pasta
  • 8 oz Pasta Substitute with whole wheat or gluten-free options if desired.
For the Sardine Mixture
  • 2 cans Sardines Packed in olive oil.
  • 2 Tbsp Olive Oil Extra virgin recommended.
  • 3 cloves Garlic Minced.
  • 1 Tbsp Lemon Juice Fresh preferred.
For Garnish
  • 1 handful Fresh Herbs e.g., parsley or basil.

Method
 

Preparation
  1. Boil water in a large pot and cook the pasta according to package instructions until al dente, about 8-10 minutes. Drain well and set aside.
  2. In a skillet over medium heat, pour in olive oil. Once hot, add minced garlic and sauté for about 1-2 minutes until fragrant.
  3. Gently break sardines into small pieces and add them to the pan with a splash of lemon juice. Stir and heat for 2-3 minutes.
  4. Toss the drained pasta into the skillet and mix well to coat. Stir in fresh herbs.
  5. Serve immediately on plates.
