  • 6 pieces bone-in chicken thighs Use chicken breasts if preferred.
For the Marinade
  • 1/4 cup extra-virgin olive oil Avocado oil can be a substitute.
  • 2 pieces lemons Juiced (freshly squeezed for best flavor).
  • 4 cloves garlic Minced; can use garlic powder if needed.
  • 2 teaspoons dried oregano Can replace with dried basil.
  • 1 teaspoon dried thyme Fresh thyme is a lovely option if available.
  • 1 tablespoon Dijon mustard Yellow mustard works too.
  • 1 tablespoon kosher salt Adjust if using table salt.
  • 1 teaspoon freshly ground black pepper Pre-ground black pepper is acceptable.

Method
 

Instructions
  1. In a medium bowl, whisk together the marinade ingredients until well combined.
  2. Place the chicken thighs in a large mixing bowl and pour the marinade over. Cover and refrigerate for 1 to 2 hours, or up to 8 hours.
  3. Preheat your oven to 350°F (180°C). Arrange the marinated chicken in a baking dish and pour any leftover marinade over the chicken.
  4. Bake in the preheated oven for 40-45 minutes until the internal temperature reaches 175°F (80°C). Broil for an additional 2-3 minutes for crispy skin.
