Cooking Steps
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and black pepper on both sides.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear the chicken breasts for 3-4 minutes on each side until golden brown.
- Add diced jalapenos and peaches to the same skillet. Cook for 2-3 minutes until softened.
- Whisk together honey, apple cider vinegar, water, and cornstarch in a bowl until smooth.
- Pour the honey mixture over jalapenos and peaches; stir and bring to a simmer.
- Return the chicken to the skillet, spooning the sauce over it.
- Transfer the skillet to the oven; bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (74°C).
- Let rest for a few minutes before serving the Jalapeno Peach Chicken hot.
