For the Chicken
  • 4 pieces Boneless Skinless Chicken Breasts even cooking and tenderness
  • 2 tablespoons Olive Oil or avocado oil
  • 1 teaspoon Salt to enhance flavor
  • 1 teaspoon Black Pepper freshly cracked preferred
For the Glaze
  • 2 pieces Jalapenos freshly diced, remove seeds for milder flavor
  • 2 cups Peaches fresh diced preferred, canned can be used
  • 1/4 cup Honey can substitute with maple syrup
  • 2 tablespoons Apple Cider Vinegar or white vinegar/lemon juice
  • 1/4 cup Water adjust for glaze consistency
  • 1 tablespoon Cornstarch can use arrowroot powder as alternative

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and black pepper on both sides.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Sear the chicken breasts for 3-4 minutes on each side until golden brown.
  5. Add diced jalapenos and peaches to the same skillet. Cook for 2-3 minutes until softened.
  6. Whisk together honey, apple cider vinegar, water, and cornstarch in a bowl until smooth.
  7. Pour the honey mixture over jalapenos and peaches; stir and bring to a simmer.
  8. Return the chicken to the skillet, spooning the sauce over it.
  9. Transfer the skillet to the oven; bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (74°C).
  10. Let rest for a few minutes before serving the Jalapeno Peach Chicken hot.
