  • 1 cup Fresh Herbs Basil, parsley, thyme, or oregano can be mixed.
  • 1 cup Feta Cheese Can substitute with goat cheese.

Instructions
  1. Preheat the oven to 400°F (200°C) for optimal crispy potatoes.
  2. Cut the Yukon Gold potatoes into quarters and toss them in a bowl with olive oil, lemon zest, lemon juice, and oregano.
  3. Season with sea salt and black pepper, then spread them on a baking sheet.
  4. Add the halved second lemon and garlic cloves to the baking sheet.
  5. Roast in the oven for 30-40 minutes, turning occasionally for even browning.
  6. Chop fresh herbs and mix them with any leftover olive oil and crumbled feta, then drizzle over the potatoes before serving.
