  • 1 can Black Beans Rinse and drain for best results.

  • 1 cup Cherry Tomatoes Diced red bell peppers can be substituted.
  • 1/2 medium Red Onion Sweet onion offers a milder alternative.
  • 1/4 cup Pepitas (Pumpkin Seeds) Sunflower seeds can be a substitute.
For the Dressing
  • 1/2 cup Mayonnaise or Greek Yogurt Opt for dairy-free yogurt for a completely dairy-free dish.
  • 2 tbsp Fresh Lime Juice Lemon juice can be used if lime is out of stock.
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1/2 tsp Salt

Method
 

Directions
  1. In a medium bowl, mix together the mayonnaise or Greek yogurt, fresh lime juice, chili powder, garlic powder, cumin, paprika, and salt to prepare the dressing.
  2. In a large bowl, toss together the cooked shredded chicken, black beans, corn, fresh jalapeños, cherry tomatoes, red onion, and pepitas.
  3. Pour the prepared dressing over the combined salad ingredients and gently fold until well coated.
  4. Serve chilled or at room temperature, optionally topping with extra fresh lime juice.
