  • 2 cups Shredded Chicken can use rotisserie chicken
  • 1 cup Shredded Cucumber squeeze out excess water
  • 1/4 cup Red Onion can be omitted
  • 1/2 cup Kalamata Olives can substitute black olives
  • 1/2 cup Crumbled Feta use dairy-free alternatives for vegan
  • 1/4 cup Fresh Parsley can substitute with mint

Preparation
  1. In a large bowl, mix together Greek yogurt, shredded cucumber, lemon juice, dill, garlic powder, salt, and pepper until thoroughly blended.
  2. Gently fold in the shredded chicken, red onion, Kalamata olives, crumbled feta, and fresh parsley.
  3. Sample a spoonful and adjust seasoning with lemon juice or feta if necessary.
  4. Cover and refrigerate for about 30 minutes to allow flavors to meld.
  5. Before serving, sprinkle extra feta, fresh dill, or a drizzle of olive oil on top.
