How to Make Zucchini Chicken Alfredo Roll Ups
  1. Preheat your oven to 375°F (190°C), and lightly grease a baking dish.
  2. Slice the zucchini lengthwise into ⅛-inch thick strips using a mandolin.
  3. Layer each zucchini strip with 1 tablespoon of Alfredo sauce and shredded chicken. Roll tightly and place seam-side down in the baking dish.
  4. Pour the remaining Alfredo sauce over the roll ups and sprinkle shredded mozzarella cheese on top.
  5. Bake for about 25 minutes until the sauce is bubbling and the zucchini is tender.
  6. Rest for 10 minutes after removing from the oven and garnish with fresh parsley before serving.
