How to Make Zucchini Chicken Alfredo Roll Ups
- Preheat your oven to 375°F (190°C), and lightly grease a baking dish.
- Slice the zucchini lengthwise into ⅛-inch thick strips using a mandolin.
- Layer each zucchini strip with 1 tablespoon of Alfredo sauce and shredded chicken. Roll tightly and place seam-side down in the baking dish.
- Pour the remaining Alfredo sauce over the roll ups and sprinkle shredded mozzarella cheese on top.
- Bake for about 25 minutes until the sauce is bubbling and the zucchini is tender.
- Rest for 10 minutes after removing from the oven and garnish with fresh parsley before serving.
